    CHEESE STUFFED CREPES

    List of Ingredients


    • 1 lb. Ricotta cheese
    • 1/2 c grated Parmesan cheese
    • 1/2 c frozen spinach, thawed and liquid squeezed out
    • 1 tsp seasoned salt
    • 1/3 tsp white pepper
    • 3 eggs, beaten
    • 1 c shredded Mozzarella cheese
    • 2, 8 oz. cans tomato sauce
    • 1/4 c grated Parmesan cheese
    • 18 prepared crepes


    Instructions


    1. Blend Ricotta cheese, 1/2 c Parmesan cheese, spinach, salt, white pepper,eggs and about 1/3 c of the Mozzarella cheese. Place 2-3 Tbsp filling on each crepe. Roll up jelly-roll fashion and place in a large, shallow baking dish seam side down.
    2. Pour tomato sauce evenly over them. Sprinkle with 1/4 c grated Parmesan cheese and then with remaining Mozzarella cheese.
    3. Bake at 350 degrees for 15 minutes.
