CHEESE STUFFED CREPES

- 1 lb. Ricotta cheese
- 1/2 c grated Parmesan cheese
- 1/2 c frozen spinach, thawed and liquid squeezed out
- 1 tsp seasoned salt
- 1/3 tsp white pepper
- 3 eggs, beaten
- 1 c shredded Mozzarella cheese
- 2, 8 oz. cans tomato sauce
- 1/4 c grated Parmesan cheese
- 18 prepared crepes
Instructions
- Blend Ricotta cheese, 1/2 c Parmesan cheese, spinach, salt, white pepper,eggs and about 1/3 c of the Mozzarella cheese. Place 2-3 Tbsp filling on each crepe. Roll up jelly-roll fashion and place in a large, shallow baking dish seam side down.
- Pour tomato sauce evenly over them. Sprinkle with 1/4 c grated Parmesan cheese and then with remaining Mozzarella cheese.
- Bake at 350 degrees for 15 minutes.
