    List of Ingredients


    • 3 eggs
    • 1 c milk
    • 1 Tbsp butter, melted
    • 3/4 c flour
    • 1/4 tsp salt


    Instructions


    1. With hand mixer, blend eggs and milk in bowl or 4 c measuring cup. Gradually mix in melted butter. Gradually mix in flour and salt. Refrigerate for at least 1 hour.
    2. Heat a small frying pan or omelet pan (preferably with rounded sides) over medium heat. Lay wax paper on counter next to stove. When pan is heated, spray with butter spray and then pour in about 2 Tbsp of batter, swirling pan so to coat bottom of pan evenly. When edges just begin to brown, using a spatula, gently slide under and flip crepe over. Remove after 10 seconds. Place on waxed paper. For some reason the first crepe usually doesn't come out that good, so don't worry about it if it looks odd.
    3. Repeat until all batter is used up. Will probably have to re-spray with butter spray every so often. Makes about 20 crepes, depending on size of pan.
    4. They are now ready to fill. See other recipes in this category for fillings.
    5. They can also be frozen. Stack them up with waxed paper between each one. Then place in ziplock plastic bag.
