LEMON JELLO DESSERT

List of Ingredients
- 1 small pkg. lemon jello
- 1 c boiling water
- Rind & juice of 1 lemon
- 1 tsp vanilla
- 1/2 c sugar
- 1 large can evaporated milk, chilled
- 15 graham crackers, crushed into fairly fine crumbs
- 1 tsp nutmeg
Instructions
- Dissolve jello in boiling water in medium size bowl. Refrigerate until consistency is pretty thick (syrupy), but not gelled. Beat in the sugar and lemon juice/rind. In another bowl, beat the evaporated milk until whipped and peaks can be formed. Gradually stir in lemon mixture, then stir in vanilla.
- Spray a glass dish (9"x 11-3/4"x 1-1/2") with Pam. Sprinkle half of graham cracker crumbs and nutmeg on bottom of dish. Pour in jello mixture. Sprinkle with remaining crumbs and nutmeg. Chill a couple hours or until set.
