CHEF PEPPIN'S BEEF PIE

List of Ingredients
- 4 c chopped left over roast beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 Tbsp butter
- 2 Tbsp flour
- 2 c beef bouillon
- 2 lbs. potatoes, peeled & quartered, boiled with 1 clove garlic
- 1-1/4 to 1-1/3 c milk
- 1 tsp salt
- 3 eggs
- 1/2 c plus some extra Cheddar cheese
Instructions
- Heat butter in medium-sized skillet. Saute onion and garlic til tender. Add meat, stirring occasionally, til heated up. Gradually add flour; then gradually stir in bouillon, continuing to stir, until thickened. Keep warm.
- Removed garlic from potatoes. Mash potatoes (using electric mixer) with the milk, salt, eggs and cheese. (will be soupy.)
- Place beef mixture in greased casserole. Top with potatoes. Sprinkle with more cheese. Bake at 350 degrees about 40 minutes. Potatoes will get puffy and dehydrate.
