CHILE RELLENO CASSEROLE

- 1, 7 oz can whole green chiles
- 12-16 oz Jack cheese
- 5 eggs
- 1-1/4 c milk
- 1/4 c all purpose flour
- 1/2 tsp salt
- dash black pepper
- 8 oz Cheddar cheese, grated
Instructions
- Remove chiles from can. Prepare to stuff chiles either by making a slit on side or cutting stem end off.
- Cut Jack cheese into pieces that can easily be "stuffed" into chiles (approx. 1/4" thick, 1" wide, 3" long). Stuff chiles with the pieces of cheese.
- Place filled chiles in ungreased casserole. Mix eggs and milk together. In another bowl, mix the flour, salt and pepper. Gradually stir the milk/egg mixure into the flour mixture until it is smooth and free of lumps. Pour the batter over the filled chiles. Sprinkle the top with grated Cheddar cheese. Bake at 350 degrees 30-45 minutes. Serves 6.
