MY SPAGHETTI & MEATBALLS

My variation from a recipe from "Taste" TV show
List of Ingredients
- 3/4 Tbsp minced garlic
- 1/4 c olive oil
- 3, 28 oz. & 1, 15 oz. cans crushed tomatoes with their juices
- 1, 28 oz. can of water
- 1 tsp pepper
- 2 Tbsp chopped parsley
- 4 Tbsp chopped fresh basil
- 2 heaping tsp salt
- 1 tsp sugar
- 1-1/2 c soft white bread cubes
- 1/3 c milk
- 1 small eggs
- 1 lb. hamburger (7% fat)
- 1 lb. sweet or hot Italian sausage (turkey), cut into 1" pieces
- 1/2 c grated Parmesan cheese
- 1/2 tsp finely minced garlic
- 1/4 c finely minced parsley
- salt/pepper to taste
- 1-2 lb. spaghetti (1 lb. serves 4)
- 1-2 Tbsp butter
- Parmesan cheese
Instructions
- Sauce: Heat oil in a casserole. Add garlic and stir until lightly golden. Then add crushed tomatoes with their juices, water, pepper, parsley, basil and salt. Then taste it. Adjust seasoning. Sometimes I add some hot pepper flakes. Bring to a boil, cover, and simmer for 45 minutes.
- In a bowl mix together the milk and egg. Add bread cubes and toss to coat. Let sit 15 minutes.
- Mash the bread, then add the hamburger, Parmesan cheese, garlic and parsley. Mix together adding salt/pepper to taste.
- With wet hands form walnut size balls and place in pyrex lasagna dish. Cover with waxed paper and microwave on high for 10 minutes. Remove to plate or bowl. Add drippings to sauce.
- In same lasagna dish, place sausage pieces and microwave on high 10 minutes.
- Add meatballs and sausage to sauce and simmer 45 more minutes.
- Cook spaghetti according to package directions. Drain, but do not rinse (the sauce will adhere to the pasta better if not rinsed). Put back in pot and add some sauce (not all). Stir to coat, add butter and toss. Add meatballs & sausage. Plate the pasta on serving plates or pasta bowls and add more sauce on top. Serve with sprinkling of Parmesan cheese.
- Makes 8 servings using 2 lbs. spaghetti and 2 Tbsp butter.
