Baked Balsamic Chicken Cutlets

- 4-5 thinly sliced chicken cutlets
- 1/2 cup Italian bread crumbs
- 1 egg, beaten
- 2 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
Instructions
- Preheat oven to 350 degrees. In a bowl, beat the egg. In separate larger bowl or plate, add the breadcrumbs.
- Dip each piece of chicken into the egg, then the breadcrumbs, making sure to coat them entirely.
- Place chicken in a glass baking dish coated with non-stick spray. Cover with foil and bake for 20 minutes, turning chicken at the halfway point.
- In small bowl, mix the olive oil and balsamic vinegar.
- Remove the foil and brush the chicken liberally with oil and vinegar mixture.
- Bake uncovered for another 5 minutes. Serves 4.
- Each serving: 130 cal., 9 g. fat, 10 g. carbs., 115 mg. sodium.
