    FROZEN TURKEY ITALIAN SAUSAGE PATTIES

    • 1 large egg
    • 1/2 tsp ground cumin seed
    • 1-1/2 tsp ground coriander seed
    • 3/4 tsp fennel seed, crushed
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1 lb. ground raw turkey


    Instructions


    1. Beat egg and seasonings in a large bowl. Add turkey, breaking it into small chunks as you do. Using a wooden spoon, chop and mix turkey and seasonings just until blended; do not overbeat or meat will become too compact.
    2. Shape turkey mixture into 8, 1/2 inch thick patties and put between two pieces of wax paper. Spread out on a baking sheet and freeze solid, 4 hours or longer.
    3. Stack patties and store in plastic bags. Makes 8 patties.
    4. When ready to use, cook patties in skillet 5-7 minutes per side over low heat, until no longer pink in center.
    5. Can be used in spaghetti sauce and Heroes with peppers and onions.
