Slow Cooker White Chicken Chili

- 1 Tbsp. olive oil
- 3 lbs. boneless, skinless chicken breasts, cut into 1: pieces
- 2 onions, chopped
- 2 cloves garlic, minced
- 2 cans (14.5 oz. each) reduced sodium chicken broth
- 4 cans (15 oz. each) cannellini beans, rinsed and drained
- 1 can (4.5 oz.) chopped green chile peppers
- 1 tsp. ground cumin
- 1 tsp. salt
- 3/4 tsp. dried oregano
- 1/2 tsp. chili powder
- 1/8 tsp. ground cloves
- 1/8 tsp. ground red pepper
Instructions
- Heat oil in a large pot over medium high heat. Cook the chicken, onions and garlic for 5 min. or until chicken is lightly browned.
- Place in a 4-6 quart slow cooker. Stir in the broth, beans, chile peppers (with juiced), cumin, salt, oregano, chili powder, cloves and pepper.
- Cover and cook on low for 4-6 hrs. Uncoveer and cook for 1 hr, stirring occasionally, until flavors blend. Calories: 297.1; Fat: 3.9 g; Sodium: 714 mg; Carbs: 23.5 g.
