TURKEY PICATTA

- 1 lb. turkey breast fillets, pounded 1/8" thick
- 1/4 c skim milk
- 1/2 c flour
- 1 tsp Italian seasoning
- 3 Tbsp oil
- 3 JTbsp margarine
- 1 garlic clove, minced
- 1 c chicken broth
- 3 Tbsp lemon juice
- 1 Tbsp dijon mustard
- 1 Tbsp corn starch
- 2 tsp capers
- 1/2 tsp dried tarragon
- salt/pepper to taste
Instructions
- Heat skillet over medium heat. Add oil, margarine and garlic. Dip fillets in milk, then in flour with Italian seasoning. Saute fillets in skillet with oil, margarine and garlic. Remove and keep warm. In same skillet combine broth, lemon juice, mustard, corn starch, capers and tarragon. Stir over heat until thickened. Season with salt/pepper. Serve sauce over turkey fillets.
