    Thanksgiving Leftover Croquettes

    Adapted from Bird's Thanksgiving Leftover Croquettes


    List of Ingredients


    • 3 cups cooked turkey or chicken, chopped up
    • 2 cups prepared stuffing
    • 2 eggs, slightly beaten
    • Panko crumbs, for dredging (season the crumbs with seasoned salt like Lawry's and pepper)
    • 1/2 cup grated cheddar cheese
    • Left over gravy or purchase turkey gravy in can or jar.. You can also make a sauce using 1 can condensed cream of chicken soup mixed with 1/2 cup milk
    • Vegetable oil for frying
    • Egg white for coating patties so panko crumbs adhere better


    Instructions


    1. Mix the turkey or chicken, stuffing and eggs well. Refrigerate at least 3 hrs.
    2. When ready to saute them, make patties about 3" in diametere and 1/2-3/4" thick.
    3. Coat the patties with a thin coating of egg white and then coat with the seasoned panko crumbs.
    4. Heat the vegetable oil in frying pan over medium heat. Fry the patties until golden on each side, trying to only turn once (so they don't absorb a lot of oil). Place on paper towel to drain.
    5. Serve with mashed potatoes and gravy. If you are making the sauce, mix the soup with the 1/2 cup milk in a saucepan until warmed and creamy.
    6. Serves 6
