Thanksgiving Leftover Croquettes

Adapted from Bird's Thanksgiving Leftover Croquettes
List of Ingredients
- 3 cups cooked turkey or chicken, chopped up
- 2 cups prepared stuffing
- 2 eggs, slightly beaten
- Panko crumbs, for dredging (season the crumbs with seasoned salt like Lawry's and pepper)
- 1/2 cup grated cheddar cheese
- Left over gravy or purchase turkey gravy in can or jar.. You can also make a sauce using 1 can condensed cream of chicken soup mixed with 1/2 cup milk
- Vegetable oil for frying
- Egg white for coating patties so panko crumbs adhere better
Instructions
- Mix the turkey or chicken, stuffing and eggs well. Refrigerate at least 3 hrs.
- When ready to saute them, make patties about 3" in diametere and 1/2-3/4" thick.
- Coat the patties with a thin coating of egg white and then coat with the seasoned panko crumbs.
- Heat the vegetable oil in frying pan over medium heat. Fry the patties until golden on each side, trying to only turn once (so they don't absorb a lot of oil). Place on paper towel to drain.
- Serve with mashed potatoes and gravy. If you are making the sauce, mix the soup with the 1/2 cup milk in a saucepan until warmed and creamy.
