Scalloped Potatoes

List of Ingredients
- 4 c thinly sliced potatoes
- 3 Tbsp butter
- 3 Tbsp flour
- 1-1/2 c milk
- 1 tsp salt
- dash cayenne pepper
- 1 c grated sharp cheddar cheese (I used fat-free)
- 1/2 c grated cheese (to sprinkle on top)
- paprika
Instructions
- In a small sauce pan, melt butter and blend in flour. Let sit a minute.
- Add all of cold milk, stirring with a whisk.
- Season with salt and pepper
- Cook sauce on low until smooth and boiling, stirring occationally. Reduce heat and stir in cheese.
- Place half of the sliced potatoes in a lightly greased 1 qut. casserole dish. Pour half the cheese sauce over potatoes.
- Repeat with 2nd layer of potatoes and cheese sauce.
- Sprinkle the remaining cheese on top. Top with some paprika for color.
- Bake uncovered about 1 hr. at 350 deg. Makes 6 servings.
