    Scalloped Potatoes

    List of Ingredients


    • 4 c thinly sliced potatoes
    • 3 Tbsp butter
    • 3 Tbsp flour
    • 1-1/2 c milk
    • 1 tsp salt
    • dash cayenne pepper
    • 1 c grated sharp cheddar cheese (I used fat-free)
    • 1/2 c grated cheese (to sprinkle on top)
    • paprika


    Instructions


    1. In a small sauce pan, melt butter and blend in flour. Let sit a minute.
    2. Add all of cold milk, stirring with a whisk.
    3. Season with salt and pepper
    4. Cook sauce on low until smooth and boiling, stirring occationally. Reduce heat and stir in cheese.
    5. Place half of the sliced potatoes in a lightly greased 1 qut. casserole dish. Pour half the cheese sauce over potatoes.
    6. Repeat with 2nd layer of potatoes and cheese sauce.
    7. Sprinkle the remaining cheese on top. Top with some paprika for color.
    8. Bake uncovered about 1 hr. at 350 deg. Makes 6 servings.
