Roasted Tomatoes, Feta, Basil & Egg Cass

List of Ingredients
- 1 pint Baby Heirloom tomatoes, sliced in half
- 2 Tbsp grapeseed or olive oil
- 2 tsp dried Italian herbs
- 6 oz crumbled feta cheese
- 3 oz shaved parmesan cheese
- 16 oz of whisked eggs or egg product (Egg Beaters)
- 6 oz heavy cream
- 4-6 basil leaves, chiffonade or torn
- salt & pepper to taste
Instructions
- Preheat oven to 300 deg.
- In a mixing bowl place sliced tomatoes, dried herbs, oil and salt and pepper. Toss all together.
- Place on a baking sheet and roast tomatoes 30-45 min. untl tomatoes are sweet and carmelized. Put aside.
- Raise oven to 375 deg.
- Whisk eggs and cream until blended.
- Add feta, tomatoes, basil and season, mix gingerly. Pour into an 8 x 8 greased baking dish. Top with parmeson cheese.
- Bake 1 hr, or until puffed and no longer jiggly in the center.
- Cool slightly, cut and serve with chopped basil.
