    2 slices lean bacon
    1 lb. lean ground beef 500g
    1 large onion
    1 large carrot
    1 cup frozen peas 250ml
    1/4lb mushrooms 125g
    1 celery stalk
    1 tbsp flour 15ml
    1 can of beef broth
    1 tbsp Worcestershire sauce 15ml
    1/4 tsp black pepper 5ml
    3/4 tsp tarragon leaves 5ml
    3 baking potatoes
    3/4 cup grated "old" cheddar 175ml
    cheese(divided in 2)
    Paprika

    Recipe



    1. Finely chop all vegetables; set aside.

    2. Cook bacon in a large sauce pan until crisp; remove to drain on paper towel; drain all but 1 tbsp(15ml)fat from pan;chop bacon; set aside.

    3. Add beef to pan and saute over medium heat until half-cooked and starting to brown.

    4. Toss vegetables in flour; add to pan; saute until they begin to soften and pink disappears from meat. Reduce heat and simmer.

    5. Add beef broth, Worcestershire, pepper and taragon. Mix well; tilt lid on pan; simmer 45 minutes, stirring occasionally. Add chopped bacon.

    6. Cook potatoes in boiling water or in the microwave; stir in 1/2cup(125ml) Cheddar; mash until smooth using butter, margarine and/or seasonings in your usual manner.

    7. Preheat oven to 350 Farenheit.

    8. Transfer meat mixture to a 4 cup(1L)casserole.

    9.(Spread or pipe potato mixture over top;sprinkle with remaining cheese and Paprika.

    10. Broil until top is brown and cheese is bubbly. Serve with a salad for an easy supper

    Makes 4 Servings
    Hint: Meat mixture can be prepared the day before and refrigerated in the casserole dish until needed.
