    ROASTED RED PEPPER SAUCE

    I try to keep some on hand all the time.


    List of Ingredients


    • 4 red bell peppers
    • 2 large cloves of garllic
    • 1 teaspoon balsamic vinegar
    • 2 teaspoons red wine vinegar (can use all of one type of vinegar if you like)
    • 1/8 cup fresh basil (if available)
    • 1/2 teaspoon salt
    • 1/2 teaspoon fresh ground black pepper


    Instructions


    1. Roast the peppers on the grill or under the broiler. Leave on the grill till black and blisteres on all sides.
    2. Remove from grill, place in a paper bag, fold the bag over and leave for 10 minutes, or until cool enough to handle.
    3. Remove from the bag and peel the peppers, remove the seeds and viens.
    4. Cut the roasted peppers into quarters and put into a food processor.
    5. Peel the garlics, and press into the food processor.
    6. Add the remaining ingredients to the food processor, and process till you have a slightly coars texture.
    7. Keep refrigerated.


    Final Comments


    Best when used fresh, but keeps well in the fridge. Serve on meat, or use as a spread on crackers.
