BEST HOT AND SOUR SOUP
List of Ingredients
- 1/ 2 cup shitake mushrooms sliced (reconstitute if using dried)
- 4 cups vegetable stock
- 1 block of extra firm tofu, cubed, 1/2"
- 6 tablespoons rice vinegar, (have used white in a pinch)
- 2 tablespoons soy sauce
- 3 green onions, sliced
- 2 eggs
- 2 tablespoons corn starch
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1-2 red chilies chopped (to taste)
- 1/2" piece of FRESH ginger, grated.
- 2-3 cloves of garlic, finely chopped.
Instructions
- Bring the veg. stock to a boil.
- Add the mushrooms, tofu, green onions, vinegar, soy sauce, salt, chiles, ginger and garlic to the stock and return to a boil.
- Simmer for 5-6 minutes.
- In a small bowl, beat the 2 eggs together.
- In a seperate bowl mix the corn starch with a small amount of water, should be thin.
- While stirring the stock, add the cornstarch and then the egg. The egg will form threads through the soup.
- Return the soup to a boil, simmer for another 5 minutes.
- Taste the soup and adjust the the vnegar and chilies for your liking.
