CARAMEL APPLES
List of Ingredients
4 medium apples, washed and dried
2 c. sugar
1 T. corn syrup
1/2 c. water
1 c. (2 sticks) unsalted butter, cut into pieces, room temperature
1 c. heavy cream
Pinch of salt
Recipe
1. Fill an oven-proof bowl with water; this is so you can submerge bottom of saucepan in water if caramel starts to burn.
2. Insert a small stick into stem end of each apple. Set apples aside on lightly buttered parchment paper.
3. Place sugar, corn syrup and water in heavy-bottom, medium-size saucepan with high sides. Stir with wooden spoon to combine. Cook over medium heat. Don't stir until syrup becomes a deep golden amber.
4. Remove from heat. Using a clean wooden spoon, beat in butter. Then stir in cream. Add salt.
5. Dip apples in caramel, swirling and tilting pan around so apples are coated completely. Return apples to paper to cool and harden.
Apples can also be rolled in finely chopped salted peanuts or finely chopped pecans.
