15 MINUTE CHEESY CHICKEN AND RICE DINNER
List of Ingredients
1 tablespoon oil
4 small skinless boneless chicken breasts
1 14 1/2 oz can chicken broth
2 cups instant rice -- uncooked
2 cups broccoli flowerets -- thawed if frozen
3/4 pound Velveeta -- cut up
Recipe
Heat oil in a large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet. Add broth to skillet: stir. Stir in Minute Rice, broccoli and Velveeta. Top with chicken; cover. Cook on low heat 5 minutes. Carefully stir until Velveeta is melted.
SERVES 4.
