    1 ripe medium-sized avocado (about 8 ounces), peeled, cut in half, pit removed
    - 1 tablespoon fresh lemon juice
    - 1 tablespoon finely chopped green onion
    - 2 tablespoons diced tomato, fresh or canned
    - 1/8 teaspoon salt


    Place the avocado halves in a bowl; add the lemon juice and mash with a fork. Add the onion, tomato, and salt; mix lightly.

    Cover tightly and use as soon as possible, as the dip will darken if exposed to air.
    Yield: Makes 3/4 Cup (6 servings)
