    Broccoli Corn Bread

    ½ medium onion, minced
    ½ cup plus 1/8 cup whole grain yellow cornmeal
    ¼ cup whole wheat flour
    ½ T baking powder
    1 T sugar
    1 egg, slightly beaten
    ¼ cup liquid egg substitute
    ½ pkg. (5 oz) frozen chopped broccoli, thawed
    4 oz. Nonfat cottage cheese
    1 T margarine, melted
    1/8 cup reconstituted dry butter replacement granules (butter buds!)

    Coat small skillet with nonstick cooking spray. Saute onion until soft. In
    large bowl, stir together cornmeal, flour, baking powder, sugar, egg, and
    liquid egg substitute. Add remaining ingredients, including onion, and mix
    well. Pour batter into medium size baking dish coated with nonstick cooking
    spray. Bake at 350 degrees for 30 minutes or golden brown.

    10 servings

    1 serving equals 81 calories (18 calories from fat) or 1 starch/bread
    exchange and 2 g total fat, .5 g saturated fat, 21 mg cholesterol, 178 mg
    sodium, 12 g carbohydrate, 2 g fiber, 3 g sugar and 4 g protein.
