Cinnamon Honey Muffins *

List of Ingredients
Yield: 12 servings
3/4 c Unprocessed bran
1 c Low-fat buttermilk
1 Egg, beaten
1/4 c Honey
1/4 c Vegetable oil
1/2 c Raisins
1/2 c Grated carrots
1/4 c All-purpose flour, sifted
1 ts Baking soda
1 ts Nutmeg
1/2 ts Cinnamon
1/4 c Strawberries
1) Preheat oven to 425 degrees. Coat muffin pan with non-stick spray.
2) In medium bowl, combine bran, buttermilk, egg, honey, oil,
raisins, and carrots. Let stand 10 minutes.
3) In a large bowl, sift together remaining ingredients.
4) Make a well in the center and add bran mixture. Stir until dry
ingredients are just moistened. Batter should be lumpy. Do not
overmix. 5) Spoon batter evenly into 12 muffin tins.
6) Bake 15 to 20 minutes or until tester comes out clean when
inserted in center of a muffin.
7) Serve with 1/4 cup of strawberries, glass of warm water with lemon
juice and black coffee or tea.
