Peanut Butter Bread*

2 cups all-purpose flour
1/2 cup sugar
2 tsps baking powder
1 tsp salt
3/4 cup reduced-fat peanut butter
1 large egg, lightly beaten
1 cup low-fat (1%) milk
Cooking spray
Preheat oven to 350 deg F. Stir together first 4 ingredients in a medium
bowl. Cut in peanut butter with a fork or pastry blender until
crumbly. Combine egg and milk in a small bowl; stir into dry
ingredients just until blended. Spoon batter into a 9 x 5-inch loaf
pan coated with cooking spray. Bake for 1 hour or until a
wooden toothpick inserted in center comes out clean. Remove from pan
immediately, and cool on a wire rack.
Serves 18 (1/2-inch slices)
