    Blueberry Blender Pancakes*

    1 egg
    1 egg white
    1 1/2 cups plain nonfat yogurt
    2 tablespoons vegetable oil
    1 cup all-purpose flour
    1/4 cup sugar
    1 1/2 teaspoons baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1/4 teaspoon cinnamon
    1 cup old-fashioned rolled oats
    1 cup blueberries
    Maple syrup (optional)

    In blender, combine egg, egg white, yogurt and oil; whirl until
    smooth. Add flour, sugar, baking powder, and soda, salt, and
    cinnamon; whirl to blend. Add oats; whirl briefly just to mix. Stir
    in blueberries.

    Spray griddle or large skillet with vegetable cooking spray; place
    over medium heat. Spoon about 3 tablespoons batter for each pancake
    onto griddle. Cook until bubbles form on top, 2 to 3 minutes. Flip
    over; cook until browned, about 2 minutes. Keep warm until pancakes
    are cooked. Serve with maple syrup.

    Each serving ( 4 pancakes) provides: 1 bread, 1 protein/meat, 1 fat,
    60 optional calories.

    Per serving: 395 calories, 10 g fat, 55 mg cholesterol, 458 mg sodium,
    62 g carbohydrate, 4 g fiber, 14 g protein. WW points = 8 (calculated
    by me and PointsFinder software).
