    Thick and Beefy Pinto Bean Stew
    Serves 4

    8 oz lean ground beef (96% fat free)
    1 (15.5 oz) can pinto beans, rinsed and drained
    1 (14.5 oz) can stewed tomatoes, Cajun-style
    1 (14.5 oz) can diced tomatoes
    3/4 cup water
    2 tsp ground cumin
    1/2 tsp black pepper

    Heat a large saucepan over medium-high heat. Add beef and cook 2 minutes or until no longer pink, stirring constantly. Add beans, tomatoes and water. Bring to a boil, reduce heat, cover tightly and simmer 15 minutes.

    Remove from heat and stir in cumin and pepper.
