Tangy Beans with Bacon*

List of Ingredients
1 large onion, chopped
1 large celery stalk, diced
1 tbsp olive oil
2/3 cup defatted beef broth, divided
1 (15 oz) can Italian-seasoned tomato sauce
1 (6 oz) Canadian bacon, cut into narrow strips
1 (19 oz) can white kidney beans (cannellini), rinsed and drained
1 red bell pepper, seeded and diced (if unavailable, substitute green bell pepper)
1/4 tsp black pepper or to taste
In a large nonstick skillet, combine the onion and celery with the
oil and 2 tablespoons of the broth. Cook, stirring, over medium heat,
about 6 to 7 minutes or until the celery is almost tender. If the
liquid begins to evaporate, add a bit more broth. Add the tomato
sauce, remaining broth, bacon, beans, red bell pepper and black
pepper. Stir to mix well. Bring to a boil. Reduce the heat, cover,
and simmer 10 to 12 minutes. Serve in bowls.
