    Exchanges: 3 meats, 2 breads, 1 fat

    Ingredients:
    1 pound boneless beef top sirloin, trimmed & thinly sliced across the grain
    1 small onion, chopped
    1 cup sliced fresh mushrooms
    1 can reduced-fat cream of mushroom soup
    1 cup beef consommé
    1/8 teaspoon ground pepper
    1/2 pound uncooked no-yolk egg noodles
    1/2 cup reduced-fat sour cream
    2 tablespoons chopped fresh parsley


    Preparation:
    Coat a large, non-stick skillet with non-stick cooking spray. Brown beef and onions over medium heat 5-7 minutes until beef is no longer pink and onions are tender, stirring occasionally.Add mushrooms and cook 3 minutes, or until tender. Reduce heat and stir in the soup, consommé and pepper. Simmer for 25 minutes, or until meat is tender. Meanwhile, cook the noodles according to package directions, drain and rinse, drain again. Cover and keep warm. Just before serving, stir in sour cream and parsley and cook for 1 minute. Do not boil or sour cream will curdle. Serve over warm noodles.
