    CHICKEN & BROCCOLI ALFREDO

    ½c chopped onion
    1½c chopped fresh broccoli
    1½c(8oz)diced cooked chicken breast
    2c cooked fettuccine noodles, rinsed & drained
    1(10-3/4oz)can Healthy Request Cream of Chicken Soup
    ½c(one 2.5oz jar)sliced mushrooms, undrained
    ¼c(one 2 ounce jar)chopped pimiento, undrained
    ¼c Land O Lakes no-fat sour cream
    ½c)1½pz)grated Kraft fat-free parmesan cheese
    1/8tsp black pepper

    In a lg skillet sprayed with butter-flavored cooking spray, saute onion & broccoli for 6-8 min. Stir in chicken & fettuccine. Add chicken soup, undrained mushrooms, & undrained pimiento. Mix well to combine. Fold in sour cream, Parmesan cheese, & pepper. Lower heat & simmer for 5 min or until mixture is heated through, stirring occasionally.

    Serves 4(1¼c) Each=

    HINTS:If you don't have leftovers, purchase a chunk of cooked chicken breast from you local deli.

    1½c uncooked fettuccine usually cooks to about 2c.
