Red Bean and Rice Bake

2 tsp. olive oil
1 1/2 c onion, diced
2-3 cloves garlic, minced
1 c green pepper, diced
1 c canned tomatoes, crushed
1 T lemon juice
1 T chili powder
2 c cooked brown rice
3/4 tsp salt
15 oz can kidney beans, drained and rinsed
2/3 c shredded, reduced-fat Monterrey Jack cheese
Instructions
Preheat oven to 350 degrees (unless you want to use microwave). Heat oil in non-stick skillet over medium heat. Add onion and garlic. Saute until tender. Add green pepper and saute until tender. Strain tomatoes and reserve liquid. Break tomatoes up into small pieces. Add to skillet mixture along with lemon juice, chili powder and salt. Add all or some of the reserved tomato juice. Bring to a boil, cover and reduce heat to low. Simmer about 5-10 minutes.
