1 lb 96% lean ground beef
1 ¼ C quick oats
¼ C minced onion
1 C shredded zucchini
½ tsp celery or onion salt
1 C skim milk
2/3 C canned diced tomatoes
¼ C egg substitute
Combine all ingredients (it will look very soupy at this point, but the oatmeal will soak it up in the oven). Pour into a loaf pan that has been sprayed with Pam. Bake at 350 degrees for 1 hr, 20 min.
