Chicken Pie with Stuffing Crust*

CHICKEN PIE W/STUFFING CRUST *****
4 ½ oz onion and sage dry stuffing mix (3 cups)
1 ½ cups canned chicken broth
8 oz cooked chicken, diced
1 ½ oz shredded Cheddar cheese (1/3 cup)
2 eggs or equivalent in egg substitute
1 cup evaporated skim milk
¼ teaspoon salt
1/8 teaspoon pepper
½ teaspoon poultry seasoning
Dash paprika
Preheat oven to 350 degrees.
In medium saucepan, heat chicken broth to boiling. Add stuffing mix. Remove from heat and mix well until stuffing mix is soft. Cool slightly. Press into 8” pie plate sprayed with butter flavored cooking spray. Bake about 15 minutes or until crust is slightly brown. Cool. Place chicken on shall bottom. Sprinkle cheese over top. In medium bowl combine eggs, evaporated skim milk, salt, pepper and poultry seasoning. Mix well with wire whisk. Pour over top of cheese. Sprinkle top with paprika. Bake for 30-40 minutes, or until golden and a knife inserted in center comes out clean.
