    Serves 6

    List of Ingredients





    3 c Mixed chopped vegetables
    Like broccoli, carrots,
    Mushrooms, zucchini, tomato
    1/2 ts Dried Italian herbs
    1 ds Pepper
    2 tb Butter or margarine
    2 Eggs
    1 c Low-fat milk
    1 c Sifted all-purpose flour
    1/4 ts Salt
    4 oz Shredded Jack cheese
    1/2 c Mixed blueberries/raspberry

    1) Preheat oven to 435 degrees. Steam or microwave vegetables until
    just tender. Drain.
    2) Toss in bowl with herbs and pepper. Set aside.
    3) Put butter in 10 inch pie plate and set in oven until the butter is
    melted.
    4) In a medium bowl, beat eggs. Add milk and beat until well blended.
    5) Add flour and salt and beat until batter is smooth.
    6) Pour batter into heated pie plate.
    7) Spread vegetables evenly over the batter to within 1 inch of the
    edge. Sprinkle with the cheese.
    8) Bake 30 minutes or until brown and puffy. Serve, cut in wedges.
    9) Serve with side dish of berries and cup of black coffee or tea.
