1 Teaspoon Olive Oil
1 Teaspoon Minced Garlic
15 Oz Can Diced Italian-Style Tomatoes
2 Cups Uncooked Penne Pasta
1/4 Cup Parmesan Cheese -- Finely Shredded
Preheat nonstick skillet over medium heat. Pour olive oil into hot skillet; add garlic and saute for one minute. Add entire contents of canned tomatoes to skillet, and stir in one can full of water. Bring to a boil. Add pasta and reduce heat to low . Cover and simmer for 7 minutes.
Remove cover, stir and simmer until most of the liquid has been absorbed. Transfer to serving bowl and sprinkle with cheese. Serves 4 at 5 points each
