    20 Minute Chicken & Brown Rice Pilaf

    1 tablespoon vegetable oil
    4 boneless skinless chicken breast halves
    1 can (10-1/2 ounces) condensed chicken broth
    1/2 cup water
    1 cup sliced fresh mushrooms
    1 small onion, chopped
    1 cup frozen peas
    2 cups MINUTE® Brown Rice, uncooked


    1. HEAT oil in skillet. Add chicken; cook until browned. Remove chicken.
    2. ADD chicken broth and water to skillet; stir. Bring to boil.
    3. STIR in mushrooms, onion, peas and rice. Top with chicken; cover. Cook on low heat 5 minutes or until chicken is cooked through. Let stand 5 minutes.

    Take a Shortcut: Omit oil. Substitute 1 package (6 ounces) LOUIS RICH Grilled Chicken Breast Strips for the cooked chicken breasts. Bring chicken broth and water to a boil in large skillet. Stir in chicken breast strips with the mushroom, onions, peas and rice. Cook over low heat until mixture is thoroughly heated, stirring occasionally.
