    Cooking spray
    4 (4 oz) skinless, boneless chicken breast halves
    1 green bell pepper, coarsely chopped
    1 (14-1/2 oz) can stewed tomatoes, undrained and chopped
    2 tspns hot sauce
    1/3 cup chopped fresh cilantro, divided
    1/2 tsp dried thyme
    2 tsps olive oil

    Coat a large nonstick skillet with cooking spray; place over medium-
    high heat until hot. Add chicken, bell pepper, tomatoes, 2 teaspoons
    hot sauce, 1/4 cup cilantro, and the dried thyme. Bring to a boil;
    cover, reduce heat, and simmer 10 minutes. Uncover and simmer 10
    minutes. Stir remaining cilantro and olive oil into chicken mixture.

    Serves 4
