4 boneless skinless chicken breasts, 1/3 C fat free evaporated milk, 1/3 C dijon mustard, 1/3 C italian breadcrumbs, 1/3 C grated parmesan cheese
Preheat oven to 350. Spray baking dish with non stick cooking spray. Combine dijon mustard & evaporated milk in a bowl. Combine breadcrumbs & parmesan cheese in a bowl. Dredge chicken through mustard mixture and then through breadcrumb mixture. Place in baking dish. Bake for 30-45 minutes or until chicken is no longer pink. 4 servings at 5 points each
