Italian Chicken with Peppers and Onions*

List of Ingredients
3 tbsps olive oil
1 tsp minced garlic
1 lb boneless, skinless chicken breast, cut into 2-inch pieces
1 (15 oz) can chunky Italian-seasoned tomato sauce
2-1/2 cups frozen mixed pepper and onion stir-fry
Salt and pepper to taste
1-1/2 cups penne or similar pasta, cooked according to pkg directions
2 tbsps grated Parmesan cheese
In a large, nonstick skillet, combine the oil and garlic. Add the
chicken, and cook over medium heat, stirring frequently, until the
chicken begins to brown, about 4 to 5 minutes. Add the tomato sauce.
Stir in the pepper and onions. Bring to a boil. Reduce heat, cover,
and simmer, stirring occasionally, about 12 to 15 minutes, until the
chicken is cooked through. Stir in the pasta. Sprinkle with Parmesan
cheese. Serve from skillet.
Serves 4 (1-1/2 cups)
