Mandarine Orange Chicken

2 tsp sesame oil
4 (4-oz) skinless, boneless chicken breast halves
salt
pepper
1 (11-oz) can mandarin oranges, un-drained
½ C green onions, chopped
1 T jalapeno pepper, seeded and finely chopped
1 T garlic, chopped
½ C fat-free chicken broth
1 T soy sauce
2 tsp cornstarch
1. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to skillet; cook 4 minutes on each side or until browned.
2. While chicken cooks, drain oranges, reserving 2 tablespoons of the juice. Add the reserved juice, the oranges, jalapeno, broth and garlic to pan. Reduce heat; bring to a simmer.
3. Remove the chicken from the pan and set aside. Combine soy sauce and cornstarch (add a little bit of water if necessary) to make a slurry. Add to pan, stirring well. Cook one minute or until thickened.
4. Serve chicken breasts with a spoonful (about 1/3C) of sauce poured over.
