    Serves: 4
    Exchanges: 1 meat, 1-1/2 fat

    Ingredients:
    2 cups pecan chips, toasted; divided use 3 cups finely chopped cooked chicken (1 roasted chicken) 1 can (10-3/4 oz) fat free cream of mushroom soup
    8 ounces reduced fat cream cheese, softened
    1/4 cup chopped pimentov
    2 tbsp. finely chopped green bell pepper
    2 tbsp. finely chopped sweet onion
    1/2 tsp. granulated garlic
    1/4 tsp. salt
    Freshly ground black pepper to taste
    Tabasco to taste

    Preparation:
    In a medium sized bowl, combine 3/4 cup of the ground pecans with the remaining ingredients. Using your hands, divide and roll mixture into about 3/4-inch balls. Roll each ball in remaining pecan chips to coat. Refrigerate over night. Serve chilled or at room temperature with Creole Mustard Sauce. Makes about 80. Serving size 4.
