3/4 cup crushed potato chips
1/3 cup grated Parmesan cheese
1/2 tsp onion salt
1/2 tsp. paprika -- hot
1/4 tsp black pepper
1/4 cup milk
1/4 cup olive oil
1 pound chicken breast, no skin, no bone, R-T-C -- 4
1. In a shallow pan, combine chips, cheese, onion salt, paprika, and black
pepper.
2. Blend milk and oil in a shallow bowl. Dip chicken first into milk-oil
mix, then in crumbs. Press crumbs on to coat evenly.
3. Arrange chicken in a non-stick baking pan. Bake in 375F till done, 20-40
minutes.
4. Serve hot or cold.
