Serves: 8
Exchanges: for chicken only: 3 meats, 1/3-cup rice: 1 bread
1 large jar SALSA (choose degree of hotness)
1 1/2 pounds of chicken tender strips
1 cup low-fat shredded cheese
Layer chicken in bottom of 9x13 dish and pour entire jar of salsa over the top. Cover with aluminum foil and bake for 35 minutes on 350 degrees. Remove foil, spread cheese on top and bake an additional five minutes. Serve over rice.
