Hot Tamale Tortilla Pizzas
6 (8 inch) fat-free flour tortillas
1 (15 oz) can fat-free spicy refried beans
1-1/2 cups fat-free finely-shredded Mexican cheese
2 tbsps chopped green chilies
1 cup corn kernels, drained
3 tbsps chopped green onions
1-1/2 cups chopped tomatoes, well drained
3/4 cup fat-free salsa
Preheat oven to 425 deg F. Line baking sheet(s) with foil and spray with
non-fat cooking spray. Arrange tortillas in a single layer on baking
sheet(s). Spread each tortilla with refried beans; sprinkle 2
tablespoons cheese on each tortilla. Top with chilies, corn, green
onions, tomatoes and remaining cheese. Bake in preheated oven 10 to
12 minutes, until tortilla is crisp and cheese is completely melted.
Serve with salsa.
