POLYNESIAN HAM *****
2 cups hot cooked rice
8 oz ham, cubed (90% lean)
1 cup canned pineapple tidbits, packed in its own juice, undrained
1 cup green pepper, cut in large chunks
Brown sugar replacement to equal 3 Tablespoons
1 Tablespoon cornstarch
2 Tablespoons vinegar
1 Tablespoon soy sauce
½ cup water
In large skillet, sprayed with butter flavored cooking spray, brown ham cubes. Add pineapple tidbits with juice and green pepper. Lower heat. Cover and cook slowly 15 minutes.
Mix cornstarch and brown sugar replacement. Stir in vinegar and soy sauce. Add water and mix well to blend. Add to ham mixture and cook, stirring constantly, until mixture boils and sauce thickens. Serve over hot rice.
