Pumpkin Spice Bread
1 cup Quaker Oats (quick or old fashioned, uncooked)
1/2 cup skim milk
2 cups all-purpose flour
1/2 cup Splenda
2 t baking powder
2 t pumpkin pie spice
1/2 t baking soda
1/2 t salt (optional)
1 cup Pure Pumpkin
1/2 cup egg substitute or 4 egg whites
1/3 cup vegetable oil
1. Heat oven to 350. Lightly spray bottom only of 9 x 5 inch metal loaf pan with cooking spray. In medium bowl, combine oats and milk; mix well. Set aside.
2. In large bowl, combine flour, sugar or sweetener, baking powder, pupmpkin pie spice, baking soda and, if desired, salt; mix well.
3. Add pumpkin, egg substitute and oil to oat mixture; mix well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Pour into pan.
4. Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan; remove to wire rack. Cool completely before slicing. Storee tightly wrapped.
