    Creamy Tuna and Rice

    1 10 3/4 oz can Healthy request Cr of chicken or mushroom soup
    1 c. SM
    2 t. reduced sodium soy sauce
    1 6 oz. can white tuna, drained and flaked
    1/2 c. frozen peas, thawed
    1 2 oz jar chopped pimento, drained
    black pepper
    1 c. uncooked Minute Rice

    In a lg skillet, combine first 3 ingred. Stir in remaining ingred. except rice. Bring to a boil and remove from heat. Stir in uncooked rice. Cover and let set for 5 min. Fluff with a fork before serving.

    Makes 4 (1 cup) servings

    I'm constantkly looking for ways to incorporate more fiber into my diet, so with the spaghetti salad I always use whole wheat pasta. The point calculation in the Creamy Tuna and Rice is made using brown rice. You do need to let it set a bit longer if you use instant brown rice.
