MEDITERRANEAN TUNA MELTS*

Yield: 4 servings
- 12-ounce can water-packed chunk-light
or albacore tuna, drained
- 1 cup canned artichoke hearts, drained and chopped
- 1/3 cup chopped red onion
- 1/2 cup nonfat or light mayonnaise
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon ground black pepper
- 4 whole-wheat or oat-bran English muffins, split and toasted
- 1/3 cup grated Parmesan cheese
Combine the tuna, artichoke hearts, onion, mayonnaise, Italian
seasoning, and pepper in a medium-sized bowl and stir to mix
well. Add a little more mayonnaise if the mixture seems too dry.
Arrange the English muffins on a baking sheet, split side up.
Spread about 1/4 cup of the tuna mixture over each piece and
place under a preheated broiler for 2 to 3 minutes, until the
tuna is heated through. Top each muffin half with 2 teaspoons
of the cheese and broil for another minute or two, until the
tops are lightly browned. Serve hot.
