Grill-Side Turkey Salad*

2 turkey breast tenderloins (1-1/2 lbs)
2 tsps dried tarragon, divided
1/2 cup thinly sliced celery
1/2 cup chopped green pepper
1/2 cup chopped red onion
2 tbsps vegetable oil
1 tbsp reduced-sodium soy sauce
1 tbsp lemon juice
1 tbsp cider or red wine vinegar
1/8 tsp pepper
1/4 tsp salt-free seasoning blend
Lettuce leaves
Sprinkle each tenderloin with 1/2 tsp tarragon. Grill, uncovered, over medium-hot heat for 8-10 minutes on each side or until a meat thermometer reads 170-180 deg F. Cool to room temperature. Cut into cubes; place in a large bowl. Add celery, green pepper and onion. In a small bowl, combin oil, soy sauce, lemon juice, vinegar, pepper, seasoning blend and remaining tarragon; mix well. Pour over turkey mixture; toss to coat. Refrigerate for at least 3 hours. Serve on lettuce.
