    Richard Simmon's Deal a Meal

    List of Ingredients




    Yield: 4 servings
    1/2 c Water-packed tuna, drained
    1 c Low-fat cottage cheese
    2 Hard-cooked eggs, peeled
    -and chopped
    1/4 c Chopped celery
    1/4 c Chopped green onion
    2 tb Chopped parsley
    1 ts Lemon pepper seasoning
    1/4 ts Seasoned salt
    1/4 c Diet mayonnaise
    2 Pita bread (1/2 per serving)
    Lettuce
    Tomato
    Carrot sticks
    1 sm Apple

    1) In mixing bowl, combine first 9 ingredients. Chill. Use as a salad
    or sandwich filling.
    2) May be stored up to a week in refrigerator.
    3) Serve with 1/2 pita bread, lettuce, tomato, and carrot stick per
    sandwich. Serve sandwich with apple and iced tea or diet soda.
