Old Fashioned Potato Salad*

Serves: 10-12 1/2 cup servings

Ingredients:
3 pounds red potatoes, cubed, cooked until just tender, slightly cooled 3 hard cooked eggs, cooled, coarsely chopped 1/4 cup chopped red onion 1/4 cup minced celery 1/4 cup diced pimentos 3/4 cup reduced fat mayonnaise (a little more or less, as desired) 1 tablespoon prepared brown mustard salt and pepper to taste
Preparation:
Combine potatoes, egg, onions, celery, and pimentos. In a small bowl combine the mayonnaise and mustard, and stir the mayonnaise and mustard mixture in a little at a time, until you have the flavor and consistency you like. Then add the salt and pepper to taste. Refrigerate for at least 4 hours or overnight. (For transport to the event place the potato salad in a gallon-size plastic bag, seal and pack on ice. Remove the salad to a bowl just before serving.)
