Oriental Spinach Salad*

List of Ingredients
6 cups spinach leaves -- fresh, stems discarded
2 whole egg, hard-boiled -- chopped
2 tablespoons Hormel Real Bacon Bits
1/4 cup lemon juice
1/4 cup cider vinegar
6 packets Equal® sweetener -- or Splenda; = 1/4 cup sugar
2 tablespoons soy sauce, low sodium
1 can mandarin oranges -- 11 oz. can; rinsed & drained -- OPTIONAL
NOTE: The can of mandarin oranges is my addition. I also threw in some sliced green onions and sliced fresh mushrooms -- counted these as an "unlimited vegetable". I love the salad dressing on this -- fat free and wonderful.
In a large bowl, combine spinach, eggs, bacon bits, and mandarin oranges -- if using.
In a small bowl, combine lemon juice, cider vinegar, sugar substitute, and soy sauce. Add to spinach mixture. Toss well to combine. Serve at once. Serves 4 (1 1/2 cups each).
