Plantation Chicken Salad
3/4 C Kraft Fat Free Mayonnaise
1/4 c sweet pickle relish
3 c (15 oz) diced cooked chicken breast
1 1/2 c diced celery
3 hard boiled eggs, chopped
3 c finely shredded lettuce
In a large bowl combine mayonnaise and pickle relish. Add chicken and celery. Mix well to combine. Fold in chopped eggs. Cover and refrigerate for at least 30 minutes. For each serving place 1/2 c lettuce on a plate and top with 3/4 c chicken salad.
Hints: 1. If you don't have leftovers, purchase a chunk of cooked chicken breast from your deli.
2. If you want the look and feel of egg without the cholesterol, toss out the yolk and dice the whites.
